• They are characterised by a much larger thickness and a much larger diameter (the candles they have their name) and, thanks to their size, can better hold the spices.

• Penne a Candela is particularly suitable for the preparation of baked pies, but can also be used for excellent dry noodles seasoned with meat or vegetable sauces on tomato-based and with the addition of peppers, courgettes, aubergines, olives and capers.

Product description

The term Penne refers in the Italian language to the goose feather used to write and which was cut oblique to obtain a tip with a thin line. The format derived from a smooth or striped pasta tube of variable length has the characteristic diagonal cut typical of the writing pen. Penne are one of the few pasta moulds with a specific date of birth: in 1865 applied for and received a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, a patent for a diagonal cutting machine. The patent was important because it allowed fresh pasta to be cut into pen shape without crushing them, in a variable format between 3 and 5 centimeters (half penne or penne). We read in the document stored in the central state archive of Rome: "So far it was not possible to achieve the diagonal cut only with hand scissors, a method that is not only too slow and expensive, but also has the disadvantage that it can be made an irregular cut and crush the pastes".
