For 4 people: 400g Barilla Orecchiette Pugliesi 250 g aubergine. 200 g sliced tomatoes. 80 g salted ricotta. 50 g onions. 3cl olive oil 1 clove of garlic. 6 basil leaves. Preparation: Cut eggplants into cubes, salt, wait until the salt after approx. 20 minutes, then turn into flour. Place cubes in a pan with oil and fry until the cubes have turned a brown colour, then on a kitchen
paper. Chop onions and garlic, heat in a pan with hot oil, add eggplant and tomatoes with salt and pepper
