The term kaymak (or kajmak, kaimak, qeymag or geymar) is a cream product made from cow or water buffalo milk that is traditionally produced and eaten in Balkan countries. In the traditional production of kaymak, milk is heated at low temperatures and simmered for several hours. Then you gradually skim off the cream that has formed on the surface. The cream is stored for several hours or even days until it forms a firm, creamy mass. Kaymak is a rich, aromatic natural product that is used in many countries in the Balkans as a filling for pastries, starters or ingredients. Nowadays, kaymak is mainly eaten as part of a typical Turkish breakfast.
