Chondrus crispus, commonly known as Irish moss or carrageen moss, is a species of red algae found along the rocky shores of the Atlantic coastlines of Europe and North America. Irish moss doesn't have a strong flavour on its own. It has a mild, slightly salty taste with subtle oceanic notes. Irish moss has been used traditionally in Irish cuisine in soups, stews, and desserts.
