It is plump and well-textured, making your paella extraordinary since it absorbs more liquid compared to other rice types and expands when cooked. Short-grain rice, also known as paella rice, is a type of short and rounded rice especially selected from varieties such as J. Sendra, Fonsa and Montsianei grown in the heart of the famous Albufera Natural Park in Sollana, Valencia. It increases significantly in size, upon cooking, absorbing all the flavours and aromas of the broth. Cook it for 18-20 mins to obtain the best result. Use 2.5 times the quantity of stock to rice.
