Directions

Butter Beans and Lime Puree: (Serves 4)
Ingredients: 2 x 400 g cans of Tropical Sun Butter Beans (drained and rinsed), Juice and zest of 1 Lime, 4 tbsp creamed horseradish, 5 tbsp olive oil, 3 tbsp of warm water, salt and freshly ground black pepper to taste.
Preparation: In a food processor or liquidiser, blend together the Tropical Sun Butter Beans, Creamed horseradish, olive oil, lime juice, lime zest and warm water until smooth and creamy. Season well, Pile the creamy puree into a shallow serving dish or plate. Grind over black pepper and serve with warm crusty bread and crisp salad leaves.
Cooking Instructions: To serve Hot: Empty the Tropical Sun Butter Beans into a saucepan. Heat on medium to low heat until thoroughly hot. Stir at intervals. Do not boil as this will impair the flavour. Drain and serve. To serve cold: Drain the Tropical Sun Butter Beans. Rinse them under running water. Drain and serve.
